Chiang Mai (pt I)

If Bangkok is the more high-strung and proper older sibling, then Chiang Mai is the more laidback and adventurous younger sibling. It was refreshing to escape to Northern Thailand after experiencing the chaos of Bangkok. I much prefer Chiang Mai. My first adventure in Chiang Mai was a daylong cooking class. Northern Thailand is known for their flavorful foods and specialized cooking classes.

Cooking @home was taught by 2 Thai sisters with no formal training. They learned from their mom. The food was delicious, which is shocking because I prepared it. (Self-depriving joke—I’m not known for my cooking.) They gave me the confidence to try cooking with chili paste and curry spice. We used palm sugar in most of our recipes, even the spicy ones. I had never been introduced to palm sugar before. It’s like sea salt compared to iodized salt—much bigger with a better taste. I could eat it like candy.
