green chili quesadillas




I've been in the mood for green chilies ever since I spent a week in Santa Fe, New Mexico over New Years. Green chilies seem to make anything taste better...beer, queso, hamburgers, anything! To feed my latest addiction, I settled on green chili quesadillas. 

With 5 simple ingredients, you can have BOMB quesadillas. 


  1. Grilled chicken
  2. Chopped onion - one of the best things for your liver health
  3. Green chilies from a can
  4. Corn tortillas - less calories than flour and tastier
  5. Shredded cheese
Place desired amount of each ingredient in between two corn tortillas. Either bake or pan fry until cheese is melty.

fork and cork - valentine's edition


Last fall, my girlfriend had a vision for a dinner club. An email was sent, and everyone expressed interest. Thus, Fork & Cork was born. Starting a dinner club with couples in their 20's is a resourceful adventure. None of us are married, so we eat off of hand-me-down mismatched plates or borrowed china. We borrow chairs and extra tables and manage to fit everybody into our tiny apartments as we take turns hosting. Once a month, our Fork & Cork family comes together to eat, drink, and be merry. Sometimes it's a riot, sometimes it's mello, but it's always a Sunday night pick-me-up.

mexican street corn

What to do when I'm missing home... Home. Texas. Tex-Mex. The best food on earth. Since I can't make it home often, I have to make my own. Read: Mexican Street Corn. The best side dish around. Four ingredients. Party in my tummy.


Corn, either a bag of frozen or 4 fresh cobs
2 T. butter
1 T. chili powder
1/4 c. Parmesan cheese

Heat the corn in any way you wish (grill, microwave, stove-top) 
Add ingredients 
Stir

*Season to your own taste, but it should taste like one of the best things you've ever eaten.
**I've never actually measured out ingredients, so the above measurements are estimates
